Fried Turnip Cake

It’s one of my fave Malaysian dishes but I’ve never seen it on a restaurant menu in the States. You really can’t replicate the magic of a street-side hawker stall with their scorching propane and seasoned woks but today’s attempt came acceptably close. (Beautiful pix of a Penang hawker at work here.) I made the “turnip”/radish/daikon cake from scratch (recipe below) since Asian store options all had MSG.

I used Rasa Malaysia’s Fried Turnip Cake and cookbook Everyday Favourites as a guide. Below are notes to help me remember the next time I give it a stab. If you google “Char Kueh Kak” you’ll find countless recipes full of tips and tricks. I look forward to scouring them all. I’m still in search of the secrets–one may be using lard/tons of sizzling oil. Everyday Favourites instructs you to add a couple more tablespoons at four different points in the cooking process. In this hawker video, you also see a lot of fat going in.

Fried Radish Cake Recipe

Half batch turnip cake (recipe below) cut in small pieces (1 cm dice or smaller)
Oil (lard?)
4 large cloves garlic
2(?) tablespoons salted/preserved radish, chai poh 菜脯
1/4 cup chile sauce* (to taste)
Dark soy sauce or fish sauce
4 eggs
2-4 cups bean sprouts
Scallions or Chinese chives
Dark sweet soy sauce (Kicap manis) if desired

Get all your ingredients prepped and ready. Stir frying happens fast. Be prepared.

Brown the turnip cake pieces
Getting excellent color and caramelization on the turnip cake is key– you’re trying to recreate the hawker’s fiery heat. I cooked the dish in two batches (Everyday Favourite tip) at once–one in a seasoned wok at high heat and another in a nonstick skillet at medium high. Both worked fine–don’t crowd the pan and resist the urge to keep tossing.

Add garlic and preserved radish
Next I created a well and added the garlic (and preserved radish*) to give it maximum time to flavor the dish. Cook it until aromatic–if you have trouble with burning, add this later.

*Well, all (most?) the recipes say to add this. I would have added it if I had it. In the past I tried to find it with the jars of Asian goods… but now I realize it’s a packet. Will use when I try again.

Add chili sauce*
Next I added a hearty dose of flavorful chili sauce to coat the pieces–about a 1/4 cup.

Many recipes call for chili sauce… but what does that mean? Maggi’s spicy ketchup? Sriracha? Sambal olek? I used some leftover fried spice paste from making nasi lemak (reconstituted dried chiles, shallots/onions, garlic, with a little sugar/salt) and that worked well. I loosened it up with a bit of soy sauce. Next time I make it, I’ll use the runny chile sauce from Everyday Favorurites using oil, garlic, pureed reconstituted dried chiles, water, salt, sugar and pepper all simmered together.

You could also add a splash of fish sauce here. I didn’t but one taster thought it could have used it.

Add the eggs
Next, add the eggs. Either push all the daikon cake to the side of the pan and cook the eggs on their own before incorporating or pour the eggs over the top of the daikon cake. The end result is similar.

Add the remaining ingredients
Add bean sprouts and scallions (I only had Chinese chives…). Cook until a little scorched and incorporated. Taste and season with salt and peppper. You can also add some good swigs of dark sweet soy sauce here (kicap manis worked).

The end result was nice and flavorful. Not as good as a hawker… but a step in the right direction.

Here’s the daikon/turnip cake recipe:
I’ve made this twice and found it to be very easy and forgiving. Some recipes call for a variety of “flours,” but I have too many random products in my pantry, so I kept it simple.

4 cups peeled and shredded daikon (or a similar equivalent)
2 cups (plus) of rice flour
Water: enough water to make a thick batter (1-2/3 cup?)
salt (1/2 tsp)
sugar (pinch)

Cook the shredded daikon in a small amount of water until tender/translucent (I did 30 min). Cool the daikon.

In a bowl, add rice flour and some water to the diakon and stir. Add enough water to make a thick pancake batter (good tip from JustBento). Season with salt and a pinch of sugar. Seasoning the cake well here, will help it taste better throughout when fried.

I have a bamboo steamer, but didn’t have any cake pans that would fit. So I transferred the batter to an 8-inch cake pan and steamed it in a dutch oven with two inverted pyrex bowls in the pan for about an hour until the cake pulled away from the sides of the pan. Cooking time will vary. The top was still wet/sticky… but it firmed up as it dried. Cool the cake overnight in the fridge. Everyday Favourites says it can be stored one week in the refrigerator. I’ll try freezing too.
